Lactobacillus acidophilus is a homofermentative, microaerophilic species, fermenting sugars into lactic acid, which grows rapidly at rather low pH values (below pH 5.0) and has an optimum growth at a temperature of around 37ºC. Lactobacillus acidophilus occurs naturally in the human and animal gastrointestinal tract and mouth, urinary tract, but it can also be found and applicated in various fermented foods.
