It is a mesophilic bacteria that is gram-positive, rodshaped, non-sporing, non-motle, anaerobic, and contains noncytochromes. Lactobacillus casei is a facultative-fermented, microaerophilic species, fermenting sugars into lactic acid, which grows rapidly at rather low pH values (below pH 5.0) and has an optimum growth temperature of around 37ºC. Lactobacillus casei is a beneficial bacteria that is found naturally in both the mouth and intestines of human beings.
Lactobacillus casei has a very strong ability to survive in gastro-acid (low pH), bile salt, enzyme digestion pressure conditions. It also has the typical character of the Lactic Acid Bacteria, producing Lactic Acid, Acetic Acid, and enzyme amylase (a carbohydrate-digesting enzyme) etc. Due to this character, the application of the Lactobacillus casei is mainly in healthy fermented dairy products, such as yoghurt, cheese, yoghurt drink etc. It is one of the most popular used probiotic bacteria in food applications.
The health benefits of Lactobacillus casei are not as significative as other Lactic Acid Bacteria strains, such as Lactobacillus acidophilus or Lactobacillus rhamnosus, but Lactobacillus casei does show some ability in diarrhea/chronic disease management, cholesterol metabolism etc.
